Ingredients
Whole wheat tortilla- 4
Chicken- 2 cups leftover from rotissere chicken
Onion- 1 large chopped
Garlic- 2 tsp minced
Tomato- 1 small chopped
Red pepper- 1 large chopped
Black beans- 1 cup
Monterey Jack cheese- 1/2 c up
Cumin- 1tsp
Cayenne pepper- 1 tsp
Lime juice- 2 tbsp
Salt- as needed
Method
- In a pan heat oil and saute the chicken. Sprinkle salt and pepper and cook till done.
- Remove the chicken from pan and keep warm. Add onion and garlic and cook for 2 minutes.
- Add tomato and red pepper and saute until the veggies are soft. Add cumin and cayenne and mix well.
- Add the cooked black beans and lime juice. Mix everything together.
- Serve in a warm whole wheat tortilla, sprinkled with monterey cheese and a side of mexican rice( Knorr mexican rice).
