Quick Chicken Wrap


Ingredients
Whole wheat tortilla- 4
Chicken- 2 cups leftover from rotissere chicken
Onion- 1 large chopped
Garlic- 2 tsp minced
Tomato- 1 small chopped
Red pepper- 1 large chopped
Black beans- 1 cup
Monterey Jack cheese- 1/2 c up
Cumin- 1tsp
Cayenne pepper- 1 tsp
Lime juice- 2 tbsp
Salt- as needed

Method

  1. In a pan heat oil and saute the chicken. Sprinkle salt and pepper and cook till done.
  2. Remove the chicken from pan and keep warm. Add onion and garlic and cook for 2 minutes.
  3. Add tomato and red pepper and saute until the veggies are soft. Add cumin and cayenne and mix well.
  4. Add the cooked black beans and lime juice. Mix everything together.
  5. Serve in a warm whole wheat tortilla, sprinkled with monterey cheese and a side of mexican rice( Knorr mexican rice).





Chicken Meatloaf



Ingredients
Ground Chicken- 1 lb
Salsa- 1 cup
Garlic powder- 1 tbsp
Chili flakes- 1 tbsp
Bread Crumbs- 1/4 cup
Egg- 1 slightly beaten
Salt and pepper- as needed
Shredded Cheese - 1 cup Mexican blend

Method

  1. Preheat oven at 350*F.
  2. In a bowl, combine all the ingredients except cheese.
  3. Spray oil in a meatloaf pan and arrange the chicken mixture.
  4. Bake for 40-45 minutes. The center of meatloaf must be 165* when cooked.
  5. Spread the shredded cheese evenly on top of the meatloaf and bake for 5 more minutes.
  6. Remove from oven and let it cool for few minutes.
  7. Cut into thick slices and serve warm.

Masala Chicken Kabobs



Ingredients
Chicken kabobs- 4
Red onion- 1 large sliced lengthwise
Mixed pepper- 2 cups(frozen)
Chili powder- 1tsp
Coriander powder- 1tsp
Cumin powder- 1/2 tsp
Garam masala powder- 1tsp
Salt- as needed.

Method

  1. In a pan heat oil and saute the onions until soft.
  2. Add the mixed peppers and spice powders.Cook for 5 minutes.
  3. Add kabobs to the pan and mix well. Cook for additional 5 minutes.
  4. Serve the kabobs and pepper mixture in a pita bread. 
  5. Top it with mint-yogurt chutney.


Spicy Turkey meatloaf


Ingredients
Ground turkey- 1 lb
Bread crumbs- 1/2 cup
Egg- 1 lightly beaten
Garlic- 1 tsp minced(powder can be substituted)
Onion- 1 medium finely chopped
Green pepper- 1 
Tomato ketchup- 1 tbsp
Worcestershire sauce- 1 tsp
Paprika- 1 tbsp
Cayenne Powder- 1/2 tsp
Cumin powder- 1/4tsp
Salt and pepper- as needed

For topping
Tomato ketchup- 1 tbsp
Barbecue sauce- 1 tbsp
Combine the sauces together in a small bowl.

Method 
  1. In a large bowl, mix all the ingredients together and refrigerate for 30 minutes
  2. Preheat oven at 350*F.
  3. Spray oil in a meat loaf pan and arrange the turkey mixture and bake for 45- 50 minutes. The center of the meatloaf must be 165*f when completely cooked.
  4. Baste the topping on the meatloaf and bake for 5 more minutes.
  5. Remove from oven and let it rest for 10 minutes.
  6. Cut into thick slices and serve.





Rotisserie chicken wrap


Ingredients
Rotisserie chicken- 2 cups( leftover)  chopped
Scallions- 1/4 cup
Rice- 1 cup( Knorr Mexican rice)
Sriracha Sauce- 1 tbsp + 1tsp
Sour cream- 1 tbsp

Method

  1. Cook Mexican rice according to package directions.
  2. In a bowl mix chicken, sour cream and  sriracha sauce. 
  3. Heat skillet and warm a whole wheat tortilla wrap. 
  4. Place 2 tbsp of rice and chicken in the middle of the tortilla and sprinkle with scallions. 
  5. Roll and serve warm.


Pita pockets with sausage stuffing



Ingredients
Whole wheat pita- 4 cut into half  or pita pockets
Turkey Sausage- 4 links 
Onion- 1 medium chopped 
Green pepper- 1 chopped
Red pepper- chopped
Hot sauce- 1/2tsp
Soy sauce- 1tsp
Tomato ketchup- 1tsp(optional)
Salt and pepper- to taste
Sharp cheddar cheese- 1/2 cup shredded

Method

  1. In a pan, heat oil and cook the sausages until browned. Remove  from pan and chop the sausages roughly.
  2. In the same pan, saute the onions and peppers until soft. Add the sausages and sprinkle with all the sauces. Mix well.
  3. Heat the pitas and stuff the sausage mixture.
  4. Garnish with cheddar cheese and serve warm.


Turkey Meatloaf

Ingredients
Ground Turkey- 1lb
Bread crumbs- 1 cup*
Onion- 1 medium chopped finely
Garlic- 1tsp minced
Carrot- 1/2 cup shredded
Zucchini- 1/2 cup shredded
Red chili flakes- 1tsp
Oregano- 1tsp
Basil- 1tsp
Salt and pepper- as needed
BBQ sauce- 1/2 cup

Method

  1. Preheat oven at 350*F.
  2. In a pan heat oil and saute the onions and garlic until soft.
  3. Add the shredded veggies and the spices.Saute till all the water is absorbed and the veggies are soft.
  4. In a large bowl, mix turkey, bread crumbs and the veggies.The mixture should not be too tight.
  5. Spray oil in a loaf pan and arrange the turkey mixture and bake for 45 minutes to 1 hour.
  6. Spread the bbq sauce and bake for 5 more minutes.
  7. Transfer to a cutting board and slice the meat loaves into thick slices.
  8. Serve hot with additional bbq sauce.

*Add 1/2 cup of bread crumbs first and slowly add the rest depending on the consistency of the turkey mixture.

Curried Chicken salad


Ingredients
Chicken breast- 2 slices cooked
Onion powder- 1tsp
Garlic powder- 1/2tsp
Curry powder- 1/2tsp
Chili pepper flakes- 1tsp
Plain Greek yogurt- 1tbsp 
Mayonnaise- 1tbsp
Pumpkin seeds- 2tbsp
Salt and pepper- as needed

Method
Shred cooked chicken with a fork. In a bowl, stir together the  rest of the ingredients.
Add shredded chicken to the bowl and mix well.
Refrigerate for 2 hours. Can be served on a wrap or wheat toast.

For the dip
Mix 1tbsp of tomato ketchup and 1tbsp hot sauce( like sri racha sauce).

Roasted Potato filling


Ingredients
Potatoes- 4 cut into wedges
Garlic- 2 cloves minced
Onion- 1 large sliced lengthwise
Red pepper- 1 large sliced lengthwise
Cajun seasoning- 2tbsp
Red chili flakes- 1tsp(optional)
Lemon juice- 1 tsp
Salt- as needed
Olive oil- 2tbsp


Method

  1. In a non stick pan heat oil and add onion and garlic. 
  2. Saute until the onion  is soft.Add the potato wedges and red pepper.
  3. Sprinkle salt and Cajun seasoning, mix well. Add half cup of water and close with a lid.
  4. Cook for 15 minutes or till the potatoes are cooked. Open the lid and increase the flame.
  5. Saute till the potatoes are well roasted. Sprinkle with lemon juice and chili flakes.
  6. Serve warm as a side dish or as a stuffing inside a tortilla for a potato wrap.




Skillet Chicken filling

 Ingredients
Chicken breast- 1 lb skinless, boneless
Greek yogurt- 1 cup
Ginger garlic paste- 1tsp
Turmeric powder- 1/4tsp
Paprika- 1tbsp
Coriander powder- 1tsp
Cumin powder- 1/2 tsp
Coriander leaves- 2 tbsp chopped

Method

  1. Cut chicken into cubes. In a bowl, mix all the ingredients together until well blended.
  2. Cover and refrigerate overnight or for 4-5 hours.
  3. In a non stick pan, add oil and heat.Add the chicken mixture and cover with a lid.
  4. Cook for 15 minutes or until the chicken is soft.Remove the lid and put the flame on high.
  5. Saute till all the liquid in the pan is absorbed and the chicken is completely cooked and dry.

This chicken can be used as a stuffing for wraps or as an appetizer. 

Pesto chicken burger



Ingredients
Wheat buns- 4
Ground chicken- 1lb
Pesto sauce- 2 tbsp + 4tsp
Red pepper- 1 medium finely chopped
Salt- 1tsp
Pepper- as needed

Method

  1. In a bowl, mix chicken, 2 tbsp pesto sauce,red pepper, salt and pepper.
  2. Cover and refrigerate for an hour for the flavors to blend in.
  3. Divide the mixture into four equal balls and press with the palm into  patties.
  4. Grill or cook in a skillet until the center is no longer pink, preferably for 20 minutes.
  5. In the last few minutes, place a slice of swiss or pepper jack cheese on top of the patties.
  6. Toast the buns and spread inside of the top bun with 1tsp pesto sauce. 
  7. Place a patty on a each bun, garnish with onion slices and serve warm.





Mediterranean pizza



Ingredients
Pita bread- 2
Plum tomatoes- 1 chopped seeds removed
Spinach- 5 leaves shredded
Black olives- 5
Feta cheese- 2tbsp
Oregano- 1/4tsp
Chili flakes- 1tsp( optional)

Method

  1. Preheat oven at 400* F.
  2. Brush olive oil on top of the pita bread. Layer the vegetables starting with tomatoes, black olives, spinach and feta cheese. Sprinkle with oregano and chili flakes.
  3. Bake for 15 minutes or until the cheese is slightly melted.

Serve warm.


Feta-Turkey Burgers






Ingredients
Ground turkey- 1lb
Egg- 1
Feta cheese- 3/4 cup crumbled
Black olives- 1/4 cup sliced
Red chili flakes- 1tsp
Oregano- 1 tsp
Salt and pepper- to taste


For garnish
Onion
Tomato
Lettuce
Hummus


Method

  1. Whip the egg slightly.
  2. In a medium bowl, mix all the ingredients and refrigerate for 30 minutes for the flavors to blend.
  3. Make into patties and cook for 10 minutes on each side.
  4. Spread hummus on top slice of bread and garnish with onion, lettuce and tomato.



Ciabatta  bread tastes good with this patties.

Spicy Asian Turkey burger



Ingredients
Ground turkey - 1 lb
Egg -1
Soy sauce- 1tbsp
Worcestershire sauce- 1 tsp
Onion powder- 1tsp
Garlic powder- 1 tsp
Ginger powder - 1tsp
Chilli flakes- 1tbsp
Scallion- 1/4 cup(optional)



Whole wheat sesame hamburger buns- 6
Lettuce leaves
Onion slices
Mayonnaise
Sri racha hot sauce- as per taste


Method

  1. In a bowl , beat the egg with all the powders and sauces.
  2. Fold in the ground turkey and mix well.
  3. Divide the mixture into six equal balls and flatten with the palm into a patty.
  4. Arrange in a plate, cover and refrigerate for 30 minutes.
  5. In a griddle or outdoor grill, spray with oil and grill the burgers until well done.
  6. Toast the buns for few minutes.
  7. Spread the mayonnaise on the bun.Squeeze in the Sri racha hot sauce on top of mayo.
  8. Arrange onion slices and lettuce.

Serve hot.
