Ingredients
Zucchini- 3 cups diced
Onion- 1 large diced
Tomato- 1 medium diced
Sambar powder- 1tsp
Salt- as needed
For tempering
Oil- 1tsp
Mustard seeds- 1/4 tsp
Urad dhal- 1/2 tsp
Curry leaves- few
Dried red chilli- 1 broken into pieces
Asafoetida- a pinch
Method
- In a pan heat oil and do the tempering. Add onions and saute till soft.
- Add zucchini and tomatoes and cook for 3 minutes.
- Add salt and sambar powder.Sprinkle some water on the vegetable and mix well.
- Cover the pan with a lid and cook for 10- 12 minutes or until zucchini is completely cooked.
- Remove from heat and serve warm with rotis.
