Lemon rice



Ingredients
Cooked long grain rice- 3 cups
Lemon juice-5 tbsp
Green chilli- 4
Chilli flakes - 1 tbsp
Turmeric powder- 1/4 tsp
Roasted peanuts- 2 tbsp ( optional)
Corainder leaves- 1 tbsp
Salt- to taste


For tempering
Oil- 3tbsp
Mustard- 1/4 tsp
Urad dhal- 1tsp
Gram dhal- 1 tbsp
Curry leaves- few
Asafoetida- 2 pinches


Method

  1. In a pan heat oil and do the tempering.
  2. Add green chillies, chilli flakes and turmeric powder.
  3. Add the lemon juice and bring to a boil.
  4. Remove from heat and add the lemon juice mix to the cooked rice.
  5. Add salt and mix well. If adding peanuts, add it to the rice.
  6. Garnish with coriander leaves.


Serve the rice with potato chips.
