Ingredients
Bitter gourd- 2 cups
Turmeric powder- 1/4 tsp
Chilli powder - 1 tsp
Coriander powder- 1 tsp
Cumin powder- 1/4 tsp
Onions -1 cup sliced small
Tomato- 1/2 cup cubed
Brown sugar-2 tsp (optional)
Salt- 1/2 tsp + 1/4 tsp
For tempering
Oil - 2 tsp
Mustard seeds- 1/4 tsp
Urad dhal- 1/4 tsp
Asafoetida- a pinch
Curry leaves- few
Method
- Cut the bitter gourd into circles and remove the seed.
- Mix it with turmeric powder and 1/4 tsp salt. Set aside for 10 minutes.
- In a pan do the tempering, add onions and saute till soft.
- Add the tomatoes and the powders.
- Squeeze and drain the excess water from the bitter gourd .
- Add the gourd to the pan with 1/2 tsp salt.
- Sprinkle with water and cover the pan with a lid.
- Cook till the vegetable is soft approximately for 10 minutes.
- Sprinkle with brown sugar and mix well.
- Serve it with rotis.
