Ingredients
Eggs- 4
Onion- 1 large chopped
Tomato- 1 large chopped
Tomato paste- 1tbsp
Chili powder- 1tsp
Coriander powder- 1 tsp
Coriander leaves- to garnish
For tempering
Oil- 2tbsp
Mustard seeds- 1/2 tsp
Fennel seeds- 1tsp
Curry leaves- few
Method
- Boil eggs in water for 10 minutes. Peel shell and keep it aside.
- In a pan, heat oil and do the tempering. Add onions to the pan and saute till soft.
- Add tomatoes,tomato paste and all the powders. Mix well and cover the pan with a lid.
- When the tomatoes are soft, make slits on the boiled eggs with the tip of a knife and it to the pan.
- Add 1/2 cup of water and boil till the gravy becomes thick.
- Garnish with coriander leaves and serve warm.
