Potatoes- 3 cups
Onion- 1 large sliced lengthwise
Green chili- 2 sliced into rounds
Turmeric powder- 1/4tsp
Salt- as per taste
For tempering
Oil- 2tbsp
Mustard seeds- 1tsp
Cumin seeds- 1tsp
Curry leaves- few
Method
- Boil the potatoes, peel the skin and cube it.
- In a pan, heat oil and add the tempering ingredients. Add onion and green chili and saute until soft.
- Add the cubed potatoes,sprinkle with turmeric powder and salt.
- Mix until the potatoes are well coated with salt.
- Cook on low flame until the potatoes are slightly roasted.
- Remove from heat and serve warm with rotis.
