Bottle Gourd Kootu




Ingredients
Bottle Gourd- 3 cups diced
Onion- 1 medium diced
Tomato- 1 medium diced
Turmeric powder- 1/4tsp
Sambar powder- 1tsp
Salt- as needed
Moong dhal- 2 cups cooked
Lemon juice- 1tbsp

To grind
Coconut- 2 tbsp
Green chili- 2
Cumin seeds- 1tsp
Grind with 1/4 cup of water in a blender and set aside.

For tempering
Oil- 1tbsp
Mustard seeds- 1tsp
Cumin seeds- 1tbsp
Red chili- 1
Asafoetida- a pinch 
Curry leaves- few

Method

  1. In a pan heat oil and do the tempering. Add onion and fry till translucent.
  2. Add bottle gourd and turmeric powder and fry for 2 minutes. Add the tomatoes and sprinkle with salt and sambar powder.
  3. Add 1/4 cup of water to the pan and close with a lid. Cook for 5 minutes till the veggies are soft.
  4. Add dhal and the ground ingredients and cook for another 10 minutes in a low flame. Add water if needed. The mixture must be semi solid. Remove from heat and add the lemon juice.
  5. Mix well and serve hot with rice and papad.
