Zucchini curry


Ingredients
Zucchini- 2 large chopped
Onion- 1 large chopped
Tomato- 1 medium chopped
Chili powder*- 1tsp
Coriander powder- 1.5 tsp
Salt- as needed

For tempering
Oil- 1tbsp
Mustard seeds- 1/2 tsp
Urad dhal- 1tsp
Asafoetida- a pinch

Method

  1.  In a pan heat oil and do the tempering. Add onions and saute until soft.
  2. Add zucchini and tomato and cook till soft. Add the powders and mix well.
  3. Cover the pan with a lid and cook under medium flame. Do not add water.
  4. Cook for 8- 10 minutes. Serve warm with rice and dhal.


* sambar powder can be used instead of chili and coriander powders.
