Ingredients
Zucchini- 2 large chopped
Onion- 1 large chopped
Tomato- 1 medium chopped
Chili powder*- 1tsp
Coriander powder- 1.5 tsp
Salt- as needed
For tempering
Oil- 1tbsp
Mustard seeds- 1/2 tsp
Urad dhal- 1tsp
Asafoetida- a pinch
Method
- In a pan heat oil and do the tempering. Add onions and saute until soft.
- Add zucchini and tomato and cook till soft. Add the powders and mix well.
- Cover the pan with a lid and cook under medium flame. Do not add water.
- Cook for 8- 10 minutes. Serve warm with rice and dhal.
* sambar powder can be used instead of chili and coriander powders.
