Zucchini Dhal



Ingredients
Zucchini- 2 cups chopped
Onion- 1 medium chopped
Green chilies- 2 slit
Masoor dhal- 1 cup
Paprika- 1tbsp
Salt- as needed
Lemon juice- 1tsp

For tempering
Oil- 1tbsp
Mustard seeds- 1/2tsp
Cumin seeds- 1tsp
Curry leaves- few

Method

  1. In a pan heat oil and do the tempering.Add onions and green chilies. Saute till soft.
  2. Add zucchini and cook for 2 minutes. Add the dhal, paprika and salt. Mix well.
  3. Add 2 cups of water and cover the pan with a lid.
  4. Cook for 10- 12 minutes in medium flame until the dhal is well cooked and the veggies are soft.
  5. Add lemon juice and mix well.
  6. Remove from heat and serve warm with rice or rotis.
