Ingredients
Zucchini- 2 cups chopped
Onion- 1 medium chopped
Green chilies- 2 slit
Masoor dhal- 1 cup
Paprika- 1tbsp
Salt- as needed
Lemon juice- 1tsp
For tempering
Oil- 1tbsp
Mustard seeds- 1/2tsp
Cumin seeds- 1tsp
Curry leaves- few
Method
- In a pan heat oil and do the tempering.Add onions and green chilies. Saute till soft.
- Add zucchini and cook for 2 minutes. Add the dhal, paprika and salt. Mix well.
- Add 2 cups of water and cover the pan with a lid.
- Cook for 10- 12 minutes in medium flame until the dhal is well cooked and the veggies are soft.
- Add lemon juice and mix well.
- Remove from heat and serve warm with rice or rotis.
