Mixed Vegetable Kurma


Ingredients
Onion- 1 large chopped
Tomatoes- 2 medium chopped
Ginger garlic paste- 1 tsp
Carrots- 1/4 cup diced
Green beans- 1/4 cup chopped into 1/2 " pieces
Green peas- 2 tbsp frozen
Cauliflower- 1/4 cup chopped
Potato- 1/4 cup diced
Turmeric powder- 1/4 tsp
lemon juice- 1 tsp(optional)
Salt- as needed
Coriander leaves- to garnish

To grind
Coconut- 1/2 cup grated
Poppy seeds- 1tbsp
Green chilies- 4
Saunf- 1 tbsp
Cinnamon- 1"
Cloves- 2
Grind all the ingredients with 1/2 cup of water into a thick paste.

For tempering
Oil- 1tbsp
Cinnamon- 1"
Cloves- 2
Star anise- 2
Curry leaves- few

Method

  1. In a pan heat oil and do the tempering. Add onions and saute until soft.
  2. Add ginger garlic paste and turmeric powder. Saute until the raw smell of g g paste  is gone.
  3. Add tomatoes and  vegetables and fry for 2 minutes.Add 1 cup of water and salt and cook till the vegetables are soft.
  4. Add the ground paste and boil for 10 more minutes.
  5. Add lemon juice and garnish with coriander leaves.
  6. Serve warm with roti or rice.
