Ingredients
Spaghetti - 1 box
Onion- 1 medium diced
Garlic- 2 cloves minced
Roasted Tomato- 1 tbsp chopped
Mushrooms- 2 cups sliced
Baby spinach- 2 cups packed
Oregano- 1 tsp
Cayenne pepper- 1/2 tsp (optional)
Black Olives- 2 tbsp sliced
Feta cheese- 1/4 cup or more according to taste
Salt and Pepper- as needed
Method
- Cook pasta according to package directions. Reserve a cup of pasta water.
- In a large pan heat olive oil and saute the onion and garlic.
- Add mushrooms, tomatoes, oregano, cayenne powder and cook until the mushrooms are soft.
- Add spinach and cook until the leaves are wilted.
- Pour the cooked pasta to the pan, sprinkle the feta cheese and black olives.Mix well. Add pasta water if the dish is too dry.
- Serve warm.
