Ingredients
Carrots- 2 sliced lengthwise into matchsticks
Beans- 5 cut lengthwise
Ash gourd- 2 cups
Drumsticks- 2 cut lengthwise
Green Mangoes- 1 cup
Yogurt- 1/2 cup
Coconut oil- 2 tbsp(optional)
To grind
Coconut- 1/2 cup shredded
Green chili- 3
Cumin seeds- 1tsp
Grind with 1/4 cup of water in a blender and set aside
For tempering
Oil- 1tbsp
Mustard seeds- 1tsp
Cumin seeds- 1tsp
Curry leaves- few
Asafoetida- a pinch
Method
- In a pan heat oil and do the tempering.Add carrots, beans and drumsticks and saute till soft.
- Add the rest of the veggies and sprinkle with salt. Cover the pan with a lid and cook for 5 minutes.
- Add the ground paste and cook for 10 minutes. Add water if needed. When the veggies are cooked completely, add the yogurt and mix well. Cook for 2 minutes and remove from heat.
- Sprinkle the coconut oil and serve warm with adai.
